Seasonal Recipe Highlight

I've always loved Summer Cobblers. Many of my clients prefer Gluten Free lifestyles. I have a wonderful recipe for stone fruit cobbler using gluten free flour and for those not sensitive coconut oil which is subbed out for butter. You can certainly use butter if you are not sensitive to dairy. The recipe is below.

For Dough Dumpling Topping
3Cups Gluten Free Flour of Choice

2 Cups Coconut Oil Solid at Room Temperature 

1Cup Ice Water

1/4 Cup Coconut Sugar or Sweetner of Choice

For Cobbler

4-6 Peaches, Plums, Nectarines Locally Grown

1/4 Cup Coconut Sugar or Sweetner of Choice

Juice and Zest One Lemon

1/2 Teaspoon Gluten Free Starch Such as Tapicoca 

1 Teaspoon Salt

1 Tablespoon Cinnamon 

1Tablespoon Sugar or Sweetener of Choice

1) Pre-Heat Oven to 375 degrees

2) In a large mixing bowl, mix all dough ingredients dry and wet slowly incorporating until dough forms. Set aside and let rest while slicing fruit.

3) Peel and slice stone fruit and add to a medium sized bowl.

4) Add Sugar/Sweetner of choice and CB lemon juice and macerate for at least 10 minutes until flavors create a liquid.

5) Add tapioca starch to this mixture whisking into the settled juice and add salt.

6) Place mixture in oiled cast iron pan or a glass casserole dish.

7) Top with dough in preferred fashion. I like creating little dumplings. They come out beautifully.

8) Bake in oven for twenty minutes or so. Double check oven to make sure cobbler is browning. If need be rotate after 10 minutes.

9) Remove and top with cinnamon sugar. 
10) Serve with preferred ice cream, custard, or dollop of cream Fresche on top
